Now that Mr D has started eating purees and soft finger foods, I’ve been having a lot of fun creating and preparing nutritious snacks and meals for him.
I wanted an alternative to oatmeal or toast for breakfast for him . These vegetable filled pancakes are so easy to make. They are soft enough for Mr D to enjoy ( supervised) but are more nutrtious than a buttered toast strip. He has been eating two silver dollar sized ones for breakfast all last week.
For this batch, I pureed some broccoli I had in the fridge that needed to be used up and steamed some potato, but any puree you have on hand will work.
1 cup veggie puree of your choice. This time I used broccoli and potato
1 cup flour
1 tsp baking soda
1 tsp baking powder
1 egg yolk beaten
splash of organic homogenized milk
*Alternatively , you can use a packaged pancake mix . I’ve used President’s Choice Organics : Just Add Water Pancakes with good results*
Combine ingredients and cook in nonstick pan over medium heat until brown . Flip and repeat. Freeze in between sheets of wax paper in freezer safe container or bag. Warm in microwave for 1 minute or in toaster oven until thawed.
